How to make sugar cane Sirka (vinegar) at home

In Punjab, sugarcane Sirka was made at home during the summer months. Sirka is a Hindi word for vinegar.

Sirka film has almost disappeared in India. Commercial vinegars lack the flavor and texture of homemade sugar cane Sirka.

Homemade Sirka is very dark (almost black) brown, coarse texture (as a thin sauce), strong but soft taste.

The exterior of sugarcane has a white powdery substance. This is the wild yeast. Starting culture is not used.

Ingredients
1. sugar cane juice: 2 gallons
2. iron nails: 4
3. Flour 2 tablespoons
4. Water: 1½ teaspoon

Method
1. Select a Matka with a capacity of 4 gallons. Matka is a spherical vessel with an opening of 6 "round at the top,

2. Pour the juice from the sugarcane and put the nails in the Matka. These nails are the size of 10 penny nails in the US ..

3. Place a bowl of mud 6 "round like a lid to cover the opening of the Matka.

4. Mix flour and water to make a paste. Use this paste to seal the lid. The seal does not have to be airtight. The purpose of the meeting is to prevent insects can to Matka.

5. Leave the Matka un-disturbed for 4 months, out in the open.
